Reading the North Carolina Department of Labor's page on max/min hours worked is enough to fill any person with abject rage I'd imagine. It really drives the point home that the employers are allowed to do anything, and employees are literally slaves that must accept anything thrown at them.
None of this is an exaggeration. The NC DOL explicitly mentions all of this.
